The Pie
Granny Smith Apples, True (Ceylon) Cinnamon, Nutmeg, Sugar, Butter, Flour. That’s what makes an Apple Pie. You may be thinking, “What’s so special about another Apple Pie?” Before I answer that question I should tell you my journey on discovering The Blues. In the decades that have passed, I have seldom heard the blues played live. Sure, I could enjoy John Lee Hooker like most people, but it wasn’t a genre to which I gravitated. Then one day, at the Shrine in Harlem, I heard a Blues song that I could only describe in one word, patient. From there I knew what to look for in Blues music. I searched for the earliest recordings I could find. Now, I’m a traditional Blues fan. I couldn’t appreciate the Blues before because I had never heard it as intended.
Blues was like love. I’ve been in love before, so I was patient not to settle for anything less. I lost my patience for mediocre pie, so I decided to make it correctly. Now, you don’t have to settle for less. These hand-made pies are created using geometry, temperature control, and very few ingredients. My pies don’t contain additives such as cornstarch, often used to increase the thickness of pie filling. This does not contribute to flavor and this is why I don’t use it in my pies.
